Description
German Potato Salad is made with red potatoes, red onions, crispy bacon and features a
tangy dressing. German Potato Salad can be served warm, cold or at room temperature and
is a great complement to pork or almost any sausage.
Ingredients
4 pounds red potatoes (sliced or cubed)
1-2 tablespoons Kosher salt (To boil the potatoes)
1 medium red onion (sliced or diced)
10-12 slices bacon (crumbled)
Dressing:
6 tablespoons apple cider vinegar
2 tablespoons Dijon mustard
2 tablespoons granulated sugar
1 teaspoon Kosher Salt
½ teaspoon freshly ground pepper
Instructions
Use whatever method you prefer (Fry/bake) to cook the bacon, allow it to cool then crumble
and set aside. Lightly coat the bottom of a frying pan with vegetable oil over medium heat.
Add the sliced or diced onion and saute till just tender and set aside.
Place potatoes in a large pot and cover with cold water. Add 1-2 tablespoons of Kosher salt
and bring to a boil. Boil till fork tender (About 10 Minutes) drain and set aside.
In a large bowl add the potatoes, onions and bacon. In a medium bowl combine the apple
cider vinegar, dijon mustard, sugar and salt & pepper, whisk till combined.
Pour over potatoes and gently stir to coat.
